In my never-ending crusade against “tradition” I refuse to cook rice on a Friday, too much work, not to mention that my rightful place on a Friday morning is in the masjid, not the kitchen. So I whipped up some easy dishes –
Chicken Chow Mien and Mascapone Pasta.
The pasta is patronisingly easy, the recipe with shared with me by a cousin.
All you have to do, is braise some garlic in olive oil, then add one tin of liquidized Italian tomatoes (and fresh basil if you have any), salt, pepper, 2 tspns sugar, green chillies and red chili powder. When the tomato is cooked, add 3 tbspns mascapone cheese and simmer. Easy peasy. Serve with pasta of your choice. Honestly the most delicious pasta!
As for the chicken chow mien –
Cook thin strips of fillet chicken in green chillies, soya sauce and salt. Stir fry peppers, carrots, mushrooms and shredded cabbage. Add chicken to the stir fry mix. Soak Chinese noodles in boiling water. When soft, drain and add to stir fry, mix well and serve…

Went to the new Atlantis hotel today to see the aquarium where the poor whale shark is being kept captive. So different from my other whale shark experience, in Mozambique, where we swam with two of them in the wide open ocean.
